The Lunch Lady – Michael, Javier and Ashlee

When I went to the University of Oregon I met a woman named Margaret; she was in charge of all of the food services and has been working there for eight years. As we began our tour we chilled in a blizzard of coldness as we listened to her describe the kitchen. I thought I was in Subway because it smelled like fresh baked bread. When we got to one of her cafés I knew she was kind as she filled my stomach with strawberries and bananas in a cold smoothie.

She had her employees show us some of the work they do in the food services. as she showed us her employees she joked around with them like a friend instead of a boss. She explained to one particular employee, Justin, that he lives to do the job as he worked it made me laugh. Margaret also had a good sense of humor because she kept telling everyone who was in a relationship don’t get yourself in trouble, because everyone is half dressed because of the blazing heat from the sun. As we began to the other side of the school she showed us many different things.

She took us to the wood shop area were it smelled like pieces of wood had just gotten out of a brutal battle with each other. I felt it was all clean and nice because the sign that said no exotic wood. After that we went back into the glass blowing room were it felt like a jalapeno, the way it made me sweat. As the glass blowing demonstrator opened the hot glass door I saw the devil’s hand reach out for me and sprinted like a bat out of hell away from the heat. I had a new respect for women because she has a lot of responsibilities to keep up with and still does a good job of being a nice person. ~ Michael

Margaret Hoff walks 13 miles a day while still visiting students and serving 4,000 units on campus. She is great shape because of her exercise and her activeness. Margaret just doesn’t know the students she has a strong connection with them. She will literally not take the easiest way to go to her destination. Margaret is married with no kids. But it seems that she wouldn’t because she has enough kids to take care of on campus so she has her family basically

Margaret took us to some coffee shops and bought all of us drinks which were like 16 people. And they were very good. She said that that coffee shop was one of the busiest place on campus. They also do some drinking day there in the same spot but it’s under control they don’t go all crazy.

Margaret is a hard worker for her age and she still acts as if she is a new born child and ready to go face the world and do everything. Wish I had her as my trainer because she is very energetic and nice. She possibly could have her own business doing what she likes. She is a nice person to be with and talk to and even though you don’t know her she likes to make new friends. Hope to meet her more than just one day at the campus. ~ Javier

Seven coffee shops, four thousand transactions, thirteen miles walked per day, and one woman named Margaret Hoff. Margaret is manager of the EMU kitchen at the University of Oregon. Even though Margaret is fifty three years of age she appears very youthful, I believe her job keeps her young. She is a high energy, kind natured individual; buying our whole class drinks at one of the coffee shops.

Margaret chose to never have children but I don’t think she missed out on that part of her life. She figuratively has one hundred and forty children. Everyday she is surrounded by college aged kids and they all look up to her for orders and guidance. ~ Ashlee
